Love a good ol’ slice

So when did baking become a part of a mother’s job description? Is this because people think we have more time? Is it more nutritious? Surely not with all that condensed milk and sugar!

And with Christmas nearly upon us baking seems to amp up a notch with parties, outings and social gatherings. Our stove (or trips to Coles) has increased in frequency over the last couple of weeks!

So in the spirit of expanding my horizons, and being more of a “mum” I thought I would try out a good old slice. Yes, sounds a bit old fashioned but hey, we all love a good slice.

My mum used to make lots of great ones – so did my Aunty, Grandmother, Great Aunt.

So when daughter had her first Christmas party I felt a bit of baking was in order. So here it goes with a wine in one hand and the recipe in the other….this is my Great Aunt Triss’s Caramel Slice. Triss was a lovely lady who was always known for her delicious slices. As these recipes are so old I have had to change ounces to grams so if the amounts seem a bit odd, that is why. This recipe is basically about making 3 layers to build the slice.

1 cup plain flour

1/2 cup of brown sugar

1/2 cup dessicated coconut

113 grams butter (melted)

Sift flour, mix in the sugar,coconut and then stir in the melted butter.

Press into a well greased lamington tin (I’d recommend putting baking paper at the bottom too). Bake in moderate oven for 15-20 mins.

57 gram butter or margarine

2 tablespoons golden syrup

1 x 400gram can of condensed milk

Melt butter or margarine over a low heat, stir in syrup and the condensed milk. Pour over the cooked base, return to the oven and cook for another 15 minutes. Put aside until cold.

113 grams cooking chocolate (dark. milk – whatever you like)

57 grams copha

Chop chocolate and copha roughly and melt until combined. Spread over the topping and chill. (Ok not sure about the weird biscuity thing on the top of the slice in this photo! It was a bit late or perhaps the wine wasn’t helping photographic excellence at this stage)

And they were a hit!!!!! Gorgeous and yummy. Highly recommended for the festive season. So takes a bit of time but this one is totally worth it.
